The sun is shining, the beers are cold and the whole family is together… so what better time than Christmas to pull the BBQ out of the shed and entertain outside?
While the kids are getting stuck into some backyard cricket, you can wow the crowd with your BBQ skills. Often the simplest recipes are the most impressive, so give this BBQ prawn number a whirl this festive season. It will serve six and makes a great accompaniment to all the standard Christmas favourites.
What you’ll need:
- 4 tablespoons olive oil
- 4 tablespoons lemon juice
- 3 tablespoons chopped fresh parsley
- 1 tablespoon minced garlic
- freshly ground black pepper to taste
- chilli flakes to taste (optional)
- 700g uncooked fresh king prawns, peeled and deveined
How to do it:
In a big bowl, stir together the olive oil, lemon juice, parsley, garlic and black pepper. Add chilli flakes to taste (maybe back the off a touch for the kids). Add prawns and toss to coat. Marinate in the refrigerator for 30 minutes.
Preheat barbecue for high heat. Thread prawns onto skewers, piercing once near the tail and once near the head. Discard any remaining marinade.
Lightly oil cooking hotplate. Cook for 2 to 3 minutes per side, or until opaque.
